Let's Make... Cherry Clafoutis

Bring together the best seasonal British cherries with a simple, classic French recipe to embrace that summer holiday feeling!

INGREDIENTS:

400g cherries

2 Fresh Hampshire eggs

3 tbsp caster sugar (plus extra for sprinkling)

1 tsp vanilla extract

1 tbsp plain flour

pinch sea salt

125ml double cream

20g melted butter (plus extra for greasing)

1 tsp icing sugar (for decoration)

METHOD

1. Preheat oven to 180c, grease a baking dish and sprinkle with caster sugar.

2. Wash, de-stem and de-stone the cherries. Set aside.

3. In a large bowl, whisk together the eggs, sugar and vanilla.

4. Add the flour and salt, whisk until smooth.

5. Pour in the cream and butter, whisk again.

6. Stir in the cherries, and pour into the prepared baking dish.

7. Bake in the preheated oven for approx 30 mins, until golden and puffy.

8. Dust with icing sugar, and serve warm.
